Cooking with Morgan

This pretty face is my roommate Morgan, and together we decided to make some breaded chicken parmesan.IMG_3304

What you will need:

  • 4 Chicken breasts, fat trimmed
  • 3/4-1 cup of breadcrumbs
  • 3/4-1 cup of flour (I used whole wheat)
  • 1 Jar of marinara sauce
  • Cooking spray
  • About 1 cup of your cheese of choice
  • 2 eggs
  • Any additional seasonings to add to the bread crumbs

Cooking time: 30-35 minutes Prep time: 15 minutes

We washed and dried our chicken breasts before amply covering them with flour. We used whole wheat flour just to go with a more healthier option then white flour.


Next we dunked the chicken in 2 whisked eggs, then the bread crumb and spice mixture. Clean off any extra flour from the pan too at this point.

We decided to get creative with it and use our immense spice rake to help season the chicken. We used bread crumbs and as well as this Montreal flavored spices that gave the chicken an awesome taste. IMG_3303

Next, with our evenly coated chicken cutlets, we used cooking spray on the pan before we placed the chicken to bake in the oven at 450 degrees. After 20 minutes, flip the chicken, and bake for another 5 minutes.


After the first 25 minutes (5 minutes flipped), add a layer of tomato sauce to the top of the chicken. Then add a thin slice of the cheese of your choice, we used mozzarella and then added grated parmesan on top. Then place the chicken back into the oven until the cheese is melted (around 5-7 minutes)

And there you go! We decided to not add any pasta with it to save the calories and instead used fresh veggies as a side to our chicken. Everyone else in our apartment loved the chicken and it was super easy to make!


You could use the first part of our recipe to make the chicken cutlet without any of the sauce/cheese as an easy and delicious way to add protein to any meal. I just love cheese too much to not add it. Try it out and let me know what you think!
